Terroir :<\/strong>\u00a0Les sols les plus anciens sont form\u00e9s de molasses, poudingues et conglom\u00e9rats \u00e0 galets de granite.\u00a0
Les molasses de Castelnaudary composent les sols des vignes les plus au nord.\u00a0
Sur les sommets, les vignes reposent sur des alluvions anciennes form\u00e9es de galets de quartz, quartzites et schistesquartz.<\/p>

Winemaking : <\/strong>Vendanges m\u00e9caniques, \u00e9grappage, foulage. Fermentation malolactique pour garder la fra\u00eecheur et un batonnage sur lies pour apporter de la rondeur. Le vin est rest\u00e9 6 mois dans des cuves prot\u00e9g\u00e9es de l’oxyg\u00e8ne par de l’azote, \u00e0 basse temp\u00e9rature pour permettre la clarification et la s\u00e9dimentation naturelles.<\/p>
